Dainty Tomato Pie – An all-butter pie crust featuring Ashe County Butter and Lindley Mills Organic NC flour with traditional heirloom tomato filling, Ashe County and Goat Lady Dairy Cheese with micro basil.

Smoked Trout Gougere – A savory profiterole made with local flour, butter and eggs, filled with a mousse of Sunburst Farms trout and served with fresh micro dill.

Amuse Bouche

Country Ham Wrapped Melon – A Southern twist on the traditional Italian apertivo. Locally-grown melon wrapped in NC-produced country ham that is lightly grilled to highlight this sweet-and-salty pairing.

Main Courses

The Whole Hog – (Source TBD) Pit-roasted, pulled and topped with cracklins, served with a choice of hot vinegar, mustard sauce and Lexington dip.

Southern Ratatouille – A hearty vegetable main that will feature slow-roasted, locally-grown, seasonal vegetables and Southern seasonings.

Sides

Homegrown Succotash – A base of pan-roasted sweet corn and Anson Mills Hominy, local peas and beans mixed with the freshest produce from Growing High Point Farms. Optionally garnished with smoked crispy fat back.
Collards with Potlikker – Local collards braised in a traditional potlikker, garnished with roasted pimentos and cornbread croutons.
Grit Souffle – A souffle of Anson Mills Heirloom Pencil Cobb Grits, locally-sourced egg, Boxcarr Redbud Cheese and served with a sweet corn cream gravy.

Dessert

NC Chocolate Pecan Pie – Pecan made with locally-grown pecans, sweetened with local honey and flavored with Old Nick Williams Bourbon and Videri Chocolate. Served with a choice of Foster Hobbs coffee or Chad’s Chai tea.
